Today’s bread is the fifth in a series inspired by the amazing bakers of Mexico and the breads I’ve encountered on my journey’s to Mexico. This is the libro, Spanish for book. Currently my husband’s favorite, it is certainly one of my favorites, too. When you look at them from the right angle they look like books half opened to reveal pages of flaky goodness. My husband loves how light and flaky they are and, of course, their sweetness, too.
If you haven’t had the chance to see the other breads in this series, you can feast your eyes on estropajos, cacahuates, bolillos, and orejas by just following the links here.
Enjoy!
