In our continuing series on Mexican breads, inspired by the limitless creativity of Mexican bakers and the many yummy treats I've encountered on my journeys to Mexico, today's entry is the “oreja.” Oreja, of course, means ear in Spanish, so the shape tells the story. Orejas are crispy and flaky and sweet. They are best eaten over a plate so you don't lose all that flaky goodness.
