Guacamole is an extremely popular Mexican dish or dip. Very versatile, nutritious, and delicious, it's a must at every party or every day, and it's super easy to make. My boys love it. They add it to their quesadillas, tacos, tostadas, and, of course, devour it with chips.

In Mexico, we think of it more as a side dish. In fact, I never dipped chips into guacamole until I moved to California. (It's perfectly fine to do that, we just didn't do it that way when I was growing up.) We were more likely to have it next to our carne asada and other meat entrees. We also would add a spoonful on top of our favorite antojitos, like quesadillas, tacos, sincronizadas (in Spanish), and tostadas.

Here is the recipe.

Guacamole

Serves 6

Prep time: 5 minutes

Start to finish: 15 minutes

  • 1-2 Roma tomatoes, washed
  • 1/3 cup finely chopped onion
  • 1-2 serrano peppers*
  • Fresh cilantro to taste, washed
  • 3 medium avocados, washed
  • 1-2 key limes, washed
  • Salt to taste

Finely chop tomatoes, onion, serrano peppers and cilantro. Combine.

Peel and cut avocado.

In a bowl, combine tomato mixture with avocado, the juice of one lime, and salt. Taste it, you can add a little bit more lime juice, if necessary.

That's it. I told you it was quick and easy.

If you are not eating it right away, I recommend covering it with plastic, making sure the plastic is touching every inch of the top surface. This way it will keep its vibrant green color.

*I usually chop the peppers and leave them on another plate. That way, I can just serve them to those who like spicy foods. If you don't like spicy food, you can omit them. The flavor of the guacamole will change a little but it still will be great!

Notes
