These Savory Sweet Potato Waffles prove waffles don't have to be pure sweetness to be delicious. If the idea strikes you as strange, I don't blame you. It did me, too, at least at first. But I would ask that you consider the sweet and savory magic that exists in some of your other favorite foods. The BLT, chocolate chip cookies, chiles en Nogada, Jamaican jerk, mango salsa, honey-glazed bacon, and turkey stuffed chile ancho! Need I go on?

Thanks to the National Frozen & Refrigerated Foods Association (NFRA) for making these savory sweet potato waffles possible. My comments, opinions and my love for creating easy, back to school recipes are my own!

Now that the kids are back to school, we're all moving a thousand miles per hour. So I created this recipe with all of us in mind. I love the convenience of using ingredients straight from my refrigerator or freezer, like these wonderful Alexia Sweet Potato Fries and the Land O Lakes Unsalted Butter. These waffles can be made ahead of time and reheated in the toaster or toaster oven.

A Word About Butter

I've used Land O Lakes® Unsalted Butter as an all-purpose butter for everyday use in baking, cooking and topping for the better part of two decades. With no added salt, I get the pure, sweet cream taste I love, which reminds me of my childhood. Also, without salt, it allows me to control the flavor of my favorite dishes more easily.

Veggies Everyone Loves

We like to keep a bag or two of Alexia® Sweet Potato Fries in the freezer. We just pop them in the oven and they come out fragrant and crispy. It saves me from having to peel and cut them, which makes them so convenient for these waffles, as they are meant for a well-balanced breakfast on the go, or as a quick after school snack.

I like to see big strips of sweet potato in the waffles, so these fries are perfect.

Savory waffles have the added benefit of being a great way to add vegetables to our kids' foods. You can always cook a batch, put them in the fridge overnight, and then heat them up in the toaster for a yummy breakfast in the morning or as an after-school snack in the afternoon.

If you want your waffles to have a little added kick, try the Alexia® Spicy Sweet Potato Fries with chipotle seasoning.

Savory Sweet Potato Waffles

Makes 4 round waffles the size of Belgian style waffles

Prep time: 15 minutes (make sure you turn your oven on first!)

Start to finish 35 minutes

Ingredients

*Substitute buttermilk with milk. Or you can make your own buttermilk by combining milk and vinegar at a ratio equal to 1 cup of milk to 1 tablespoon white vinegar. Let it rest for 5 minutes.

Process

Pre-heat oven to 425 degrees F.

Cook Alexia Sweet Potato Fries according to the bag, for half a bag it will take approx 12 minutes. You can bake the whole bag and enjoy the crispy remainder, but if you do this, consider that the baking time will double.

Meanwhile, mix flour, baking powder, salt, and black pepper.

In a separate large bowl, lightly whisk the eggs. Pour in melted butter and buttermilk, then stir until well blended.

Add dry ingredients to the liquid mixture and stir until well-integrated. Finally, fold in cooked sweet potatoes and green onions.

Warm up the waffle maker and make the waffles following the instructions of your appliance.

Serve with pico de gallo salsa. Drizzle with sour cream if you like.

Make it a full plate by adding Jimmy Dean sausages. They are already cooked, so you just need to heat them up for a few minutes and that's it, easy peasy!

  • 3 green onions
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper

  • 4 tablespoons Land O Lakes Unsalted Butter melted
  • 3/4 cup buttermilk*
  • 1-2 cups pico de gallo salsa
