A special treat for mom on Mother’s day (or any day) Amaretto Mug Cake can be whipped up in less than 10 minutes once you get the hang of it. It may sound complicated, but there is no baking experience necessary!

You all know I’m a mom who loves sweet things and enjoys baking all kinds of things. On Mother’s Day, I think I should be able to have breakfast in bed and eat cake if I want to! Agreed? Agreed.

One of these little cakes makes for the perfect little indulgence on this special day.

Amaretto

I’ve enjoyed the texture, sweetness, warmth, and almond essence of amaretto since my college days. I might add a dash to my hot chocolate, coffee, even on top of my vanilla ice cream to give them each that special, almond touch.

So it just makes sense to me to bake a cake and flavor it with amaretto, one of my all-time favorite flavors, especially on Mother’s Day.

I encourage you to customize your mug cake by adding additional treats to make it your very own on Mother’s Day. I’ve topped mine with almonds, berries and a little bit of whipped cream.

Amaretto Mug Cake

Makes 2 mug cakes – Prep time 3 minutes – Start to finish 9 minutes

Ingredients

  • 3 tablespoons (40 gr) unsalted butter, melted
  • 1 egg
  • 4 tsp sugar
  • 2 tablespoons amaretto liqueur
  • .3 oz (10 gr) almonds, toasted and finely chopped + for decoration (about 10 almonds)
  • ¼ cup (40 gr) self-rising flour (be sure to use self-rising flour)
  • Pinch of sea salt
  • Homemade whipped cream for decoration (optional)
  • Berries for decoration (optional)

Utensils

In the large measuring cup, whisk together butter and egg. Add sugar, amaretto and chopped almonds.

Incorporate self-rising flour and salt, and beat the batter with a fork until smooth.

Divide the batter between the two mugs and microwave, one at the time, for 1 1/2 – 2 minutes until risen and cake feels firm.

The time varies depending on your microwave. Mine is a 700 watt and it took 1 minute, 45 seconds, if yours is 1,000 watts it may take 1 and half minutes or less. You may need to practice a couple of rounds to figure out the exact right time for your microwave.

These mug cakes are best served immediately with whipped cream and crushed almonds or berries, or both.
