In partnership with Truvía®

You all know I’m a mom who loves sweet things and enjoys baking all kinds of things. On Mother’s Day, I think I should be able to have breakfast in bed and eat cake if I want to! Agreed? Agreed. One of these little cakes makes for the perfect little indulgence on this special day.

Amaretto

I’ve enjoyed the texture, sweetness, warmth, and almond essence of amaretto since my college days. I might add a dash to my hot chocolate, coffee, even on top of my vanilla ice cream to give them each that special, almond touch. So it just makes sense to me to bake a cake and flavor it with amaretto, one of my all-time favorite flavors, especially on Mother’s Day.

For this recipe, I used Truvia® Spoonable to give it the perfect sweetness without having to add spoonfuls of sugar. The sweetness of Truvia comes from stevia leaf extract. Stevia leaf extract comes from the sweet leaves of the stevia plant.

I encourage you to customize your mug cake by adding additional treats to make it your very own on Mother’s Day. I’ve topped mine with almonds, berries and a little bit of whipped cream.

The time varies depending on your microwave. Mine is a 700 watt and it took 1 minute, 45 seconds, if yours is 1,000 watts it may take 1 and half minutes or less. You may need to practice a couple of rounds to figure out the exact right time for your microwave.

These mug cakes are best served immediately with whipped cream and crushed almonds or berries, or both.

Enjoy!
