During a cooking demonstration at a blogger conference recently, I participated in a Guacamole cook off by candle light, as it turns out, since there was a blackout at the Hotel!
The California Avocado Commission brought a couple of awesome Chefs who cooked for us and prepared an amazing table with a cornucopia of ingredients for us to use while creating our brand new versions of the classic dish.
We divided into various groups, each group had 5 minutes to brainstorm, and then everybody ran to the table to take the ingredients we wanted to make an out-of-this-world guacamole. Our group created a Mango Tango Avocado Guacamole and today I am going to share the recipe with you:
Mango Tango Avocado
- 4 Hass avocados
- 1/2 cup mango cut in small pieces
- 1/2 cup pineapple cut in small pieces
- 1/2 cup red onion, minced
- 1/2 cup cilantro, minced
- 1/2 cup tomatoes, cut in small pieces
- 1/3 cup cucumber
- 1 teaspoon red pepper flakes
- 1/3 cup dry cherries
- 1 lemon, its juice that is
- 2 Tablespoons rice vinegar
- salt to taste
In a medium bowl smash the avocados, add the rest of the ingredients, mix together, taste for salt and rice vinegar.
Yummy!

I’ve never made guacamole with vinegar before, it was quite tasty!
I want to try this, Silvia! The only regret I have from that night is that we didn’t get to taste all of the guacamole from each of the groups. It was so wonderful to meet you!
