Papaya Agua Fresca Recipe

You need a ripe papaya, sugar, water, lime juice and a pinch of salt to create this tropical drink on any day of the year. It's velvety sweet and aromatic.

  • 1 lb papaya about 4 cups in chunks or ½ kg
  • cup sugar or your favorite sweetener
  • 1 large lime the juice
  • Pinch of salt
  • 4 cups fresh water
  • Ice cubes

Wash and prep your papaya.

  • Wash and slice it in half, scoop out the black seeds with a spoon, and peel one half. Cut the flesh into large chunks, tossing out any stringy bits. Peel more if needed.

Blend the fruit.

  • Blend the papaya chunks, 2 cups of water, the sugar, juice from the lime, and a pinch of salt. Blend for about a minute, until the mixture is silky smooth.

Taste and balance.

  • Stir the other two cups of water. Taste and add more sugar or water if needed. The balance is part of the fun, you want the papaya to shine while the sweetness and acid keep it lively.

Serve chilled.

  • Fill glasses with ice cubes and pour the papaya agua fresca over the top. Add a slice of lime for a pop of color, or a sprig of mint if you feel festive. Enjoy right away for the freshest flavor. Or keep in the fridge until is time to serve.
