Melon Seed Agua Fresca Recipe
Also known as melon horchata or melon seed horchata, this water takes less than 10 minutes to prepare and has an intense melon flavor with a slight nuttiness.

- The seeds and membrane of 1 cantaloupe or honeydew melon
- ¼ cup sugar or to taste
- 3.5 cups of water Up to 4 if you are not adding milk
- 1/2 cup milk optional
- Ice

If you already have seeds stored in the refrigerator (remember, no more than three days in it), you don't need to do anything else. But if you don't, you need to prepare the melon.
Wash the melon rind thoroughly. Cut it in half with a knife and remove the seeds and membrane with the spoon.
Set the rest of the melon aside to use as desired.
Empty the seeds and membrane, along with two cups of water and the sugar into the blender.
Blend until the seeds have disintegrated, but do not grind until they are completely pulverized; the more you grind them, the more likely it is that the water will become slightly bitter.
Strain into a pitcher and add the two cups of water (or water and milk). Taste for sweetness and adjust if necessary.
Serve immediately, or store in the refrigerator until ready to serve.
