Green Pozole with Chicken

Green pozole is a traditional Mexican chicken and hominy soup that is served with fresh vegetable garnishes, oregano and lime.

Green pozole is easy to prepare, it's ready in less than 2 hours. Pozole freezes well, up to 3 months.

Open the can of hominy, rinse well and place in a big pot with the chicken and garlic. Cook until chicken is tender.

Take the chicken out of the broth, shred it and return it to the soup.

Make the salsa verde with tomatillos, onion, garlic, cilantro and salt and add it to the broth. Cook for 20 minutes.

Serve and garnish it with lettuce, radishes, chopped onion, avocado, a pinch of dry oregano, and lime juice.
