Savory Sweet Potato Waffles

These Savory waffles are a great way to add vegetables to kids' meals. Cook up a batch, put them in the fridge overnight, and then heat them up in the toaster for a yummy breakfast in the morning, or as an after school snack in the afternoon.

Servings: 4 round waffles the size of Belgian style waffles

Ingredients

  • 1/2 bag Alexia Sweet Potatoes Fries with sea salt
  • 3 green onions
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs
  • 4 tablespoons Land O Lakes Unsalted Butter melted
  • 3/4 cup buttermilk*
  • 1-2 cups pico de gallo salsa
  • Jimmy Dean Fully Cooked Sausage optional
  • Sour cream optional

Instructions

  • *Substitute buttermilk with milk. Or you can make your own buttermilk by combining milk and vinegar at a ratio equal to 1 cup of milk to 1 tablespoon white vinegar. Let it rest for 5 minutes.
  • Pre-heat oven to 425 degrees F.
  • Cook Alexia Sweet Potato Fries according to the bag, for half a bag it will take approx 12 minutes. You can bake the whole bag and enjoy the crispy remainder, but if you do this, consider that the baking time will double.
  • Meanwhile, mix flour, baking powder, salt, and black pepper.
  • In a separate large bowl, lightly whisk the eggs. Pour in melted butter and buttermilk, then stir until well blended.
  • Add dry ingredients to the liquid mixture and stir until well-integrated. Finally, fold in cooked sweet potatoes and green onions.
  • Warm up the waffle maker and make the waffles following the instructions of your appliance.

  • Make it a full plate by adding Jimmy Dean sausages. They are already cooked, so you just need to heat them up for a few minutes and that’s it, easy peasy!
