Stuffed Poblano Peppers in Walnut Sauce, or Chiles en Nogada as we call it in Mexico, is an exquisite dish that perfectly marries a variety of satisfying flavors and textures.

 The delicious filling includes various meats, nuts and fruits all combined into a perfect balance of sweet and savory, soft and crunchy.

Ground beef, bacon, ham, pecans, almonds, raisins, apple, peach and spices cook slowly until all the flavors are deliciously combined.

The poblano peppers are roasted, peeled, seeded, and submerged in a vinegar mix, and then stuffed with the delicious mixture of meats, nuts, and fruits.

We traditionally garnish it in the green, white, and red of the Mexican flag. A creamy walnut sauce, parsley, and pomegranate seeds cover the peppers.
