La masa arropa el delicioso relleno y por lo mismo debe ser esponjosa, suave e hidratada. En mi opini\u00f3n no hay nada peor que una masa seca y \u00e1spera.&nbsp;<\/p>\n\n\n\n<p>Es por eso que esta gu\u00eda naci\u00f3 para ayudar a principiantes y no tan principiantes a preparar una masa digna de cualquier tamal del mundo.&nbsp;<\/p>\n\n\n\n<p>Esta gu\u00eda es para hacer tamales de sal. Sin embargo no todas son adecuadas para preparar tamales.&nbsp;<\/p>\n\n\n\n<p>Las dos harinas adecuadas son: harina para hacer tamales y harina para hacer tortillas. Para tamales esponjosos recomiendo que uses harina para hacer tortillas.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sobre la Grasa<\/h2>\n\n\n\n<p>La grasa puede ser s\u00f3lida como manteca de cerdo, vegetal o de coco; o l\u00edquida en forma de aceite. Si usas aceite, es preferible usar uno neutral para que no afecte el sabor del relleno. <\/p>\n\n\n\n<p>Sin embargo, yo he usado aceite de oliva y me gusta mucho el sabor que les da. Es tu decisi\u00f3n.<\/p>\n\n\n\n<p>Otra cosa importante es que si usas aceite posiblemente necesitar\u00e1s menos caldo al momento del mezclado. Y si usas aceite de coco, \u00e9ste le dar\u00e1 otro sabor a la masa tambi\u00e9n.&nbsp;<\/p>\n\n\n\n<p>Algunas personas usan mantequilla, pero puede tener un sabor muy fuerte. Puedes, sin embargo, reemplazar un poquito de la manteca o el aceite con ella para darle un sabor diferente. <\/p>\n\n\n\n<p>A mi me gusta usar la mantequilla en los tamales dulces.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sobre el L\u00edquido<\/h2>\n\n\n\n<p>En este caso me refiero al caldo. Generalmente se usa el sabor que va con el relleno, si son tamales de pollo entonces se usa caldo de pollo, si son tamales de puerco, caldo de cerdo, sin son vegetarianos, caldo de verduras, etc.&nbsp;<\/p>\n\n\n\n<p>Algunas recetas utilizan una combinaci\u00f3n de caldo y un poco de la salsa que se us\u00f3 para el relleno. Cada caldo tiene una cantidad diferente de sal por lo que mi receta lleva s\u00f3lo una cucharadita, tendr\u00e1s que ajustar al final.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\u00bfSe Necesita Batidora para Hacer Tamales?<\/h2>\n\n\n\n<p>La masa de tamales se puede preparar tanto a mano como en batidora el\u00e9ctrica, todo depende de tu preferencia y del tipo de batidora que tengas. <\/p>\n\n\n\n<p>Cuando se usa manteca de cerdo o vegetal u otra grasa s\u00f3lida la batidora es conveniente porque har\u00e1 el batido m\u00e1s f\u00e1cilmente.&nbsp;<\/p>\n\n\n\n<p>Yo uso mi <a href=\"https:\/\/amzn.to\/3F2PT7q\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Kitchen Aid<\/a> porque es est\u00e1tica y tiene un motor con mucho poder y bate todo sin ning\u00fan problema. Algunas familias preparan los rellenos y la masa con anticipaci\u00f3n porque esto ahorra tiempo.&nbsp;<\/p>\n\n\n\n<p>Si quieres hacer esto pon la masa en un recipiente con tapa, si es herm\u00e9tico mejor, o en <a href=\"https:\/\/amzn.to\/3LG936L\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">una bolsa de silic\u00f3n<\/a> y guarda en el refrigerador por hasta 3 d\u00edas. <\/p>\n\n\n\n<p>El d\u00eda del armado de los tamales, saca la masa una media hora antes para que alcance temperatura ambiente y recupere su consistencia suave. Vac\u00eda a un recipiente, cubre con film y tapa bien. Si es un contenedor herm\u00e9tico mejor. Si crees que la tapa no cierra bien mete en una bolsa de pl\u00e1stico.<\/p>\n\n\n\n<p>Para descongelar b\u00e1jala al refrigerador un d\u00eda antes de usarla. <\/p>\n\n\n\n<p class=\"has-base-background-color has-background\"><strong>Nota importante:<\/strong> La masa descongelada tiene una textura mojada y cuando la tocas con tus manos se desmoronar\u00e1, como si fuera queso. La mezcla se ver\u00e1 un poco arenosa.&nbsp;<\/p>\n\n\n\n<p>Agrega una taza del caldo y sigue batiendo. Agrega la otra mitad de la mezcla de harina y otra taza de caldo. Y luego sin dejar de batir agrega el caldo necesario hasta lograr una masa suave de consistencia untable.&nbsp;<\/p>\n\n\n\n<p>Prueba de sal y ajusta de ser necesario.
