Nos gustan tanto que de hecho us\u00e9 mi receta en el&nbsp;<a href=\"https:\/\/www.pbs.org\/food\/features\/the-great-american-recipe-season-1-episode-4-moveable-feasts\/\" target=\"_blank\" rel=\"noreferrer noopener\">cuarto episodio (Movable Feasts)<\/a>&nbsp;de mi show de PBS, The Great American Recipe cuando prepare burritos BLT. \u00a1Que rico!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientes<\/h2>\n\n\n\n<p><strong>Harina de trigo<\/strong>&nbsp;\u2013 Yo uso la que se denomina \u201cpara todo uso\u201d pero a veces tambi\u00e9n uso harina para pan. Quedan igual de ricas de las dos formas.<\/p>\n\n\n\n<p><strong>Tocino<\/strong>&nbsp;\u2013 Tanto la grasa, como 3-4 rebanadas fritas picadas para darle un poco de textura y m\u00e1s sabor a las tortillas.&nbsp;<\/p>\n\n\n\n<p><strong>Sal<\/strong>&nbsp;\u2013 Parecer\u00eda que al agregar el tocino la sal no es necesaria pero no es as\u00ed. Lo ideal es que, tal como yo lo hice, uses grasa de tocino que has ido acumulando. <\/p>\n\n\n\n<p>Sin embargo si no tienes es f\u00e1cil obtenerla friendo algunas rebanadas de tocino. Te cuento m\u00e1s abajo en la receta. <\/p>\n\n\n\n<p>Para mi la manera m\u00e1s f\u00e1cil de hacerlo es usando mi&nbsp;<a href=\"https:\/\/amzn.to\/3YXkRqH\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">freidora de aire<\/a>&nbsp;o el horno, pero tambi\u00e9n lo puedes hacer sobre la estufa.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Almacenamiento<\/h2>\n\n\n\n<p>Lo ideal es comerlas calientitas reci\u00e9n hechas, pero lo m\u00e1s seguro es que te sobren algunas y como no tienen ning\u00fan conservador debes guardarlas en el refrigerador.<\/p>\n\n\n\n<p>Deja que se enfr\u00eden por completo, envu\u00e9lvelas en una servilleta de tela de cocina y m\u00e9telas a una bolsa de pl\u00e1stico. Te recomiendo el uso de <a href=\"https:\/\/amzn.to\/44xEE15\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">bolsas de pl\u00e1stico reusables como estas<\/a>.<\/p>\n\n\n\n<p>Estas tortillas se pueden congelar hasta por tres meses. Ponlas en una bolsa de silic\u00f3n si tienes. S\u00f3lo s\u00e1calas de refrigerador y cali\u00e9ntalas sobre un comal,&nbsp;<a href=\"https:\/\/amzn.to\/47U5Da1\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">mi comal favorito es el de hierro forjado<\/a>&nbsp;pero cualquier comal o sart\u00e9n funciona.<\/p>\n\n\n\n<p>Si est\u00e1n congeladas, descong\u00e9lalas en el refrigerador por al menos 4 horas, aunque lo m\u00e1s f\u00e1cil es que las bajes del congelador al refrigerador un d\u00eda antes.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Como Servir las Tortillas de Harina con Tocino<\/h2>\n\n\n\n<p>Estas tortillas son ideales para hacer burritos o<a href=\"https:\/\/www.mamalatinatips.com\/es\/2016\/06\/buffet-de-quesadillas.html\">&nbsp;quesadillas<\/a>. Si las haces tama\u00f1o taqueras van bien rellenas de carne o verduras.<\/p>\n\n\n\n<p>Tambi\u00e9n son perfectas para acompa\u00f1ar una comida como, este&nbsp;<a href=\"https:\/\/www.mamalatinatips.com\/es\/2018\/03\/guiso-de-chorizo-con-garbanzos.html\">guiso de chorizo y garbanzos<\/a>&nbsp;o este&nbsp;<a href=\"https:\/\/www.mamalatinatips.com\/es\/2018\/08\/bistec-a-la-poblana.html\">bistec a la poblana<\/a>.<\/p>\n\n\n\n<p>Y solitas, calientitas son una delicia. Vamos a hacerlas.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Tortillas de Harina con Tocino Caseras<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredientes<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>500 gr (aprox 4 tazas) de&nbsp;<a href=\"https:\/\/amzn.to\/44BC4qR\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">harina de trigo de todo uso<\/a><\/li>\n\n\n\n<li>60 gr (\u2153 taza) grasa de tocino*<\/li>\n\n\n\n<li>1 cucharadita de sal fina, o 1 1\/2 de sal kosher o marina<\/li>\n\n\n\n<li>1 \u00bc tazas de agua hirviendo<\/li>\n\n\n\n<li>3-4 rebanadas de tocino picadas finamente<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Utensilios<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><a href=\"https:\/\/amzn.to\/44yVNHX\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Un taz\u00f3n para mezclar grande<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/amzn.to\/3Pkkq6V\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">B\u00e1scula de cocina<\/a>&nbsp;o&nbsp;<a href=\"https:\/\/amzn.to\/2Hwdlyb\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">tazas medidoras<\/a><\/li>\n\n\n\n<li>Rodillo,&nbsp;<a href=\"https:\/\/amzn.to\/3qSF44w\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">este es mi favorito<\/a>.<\/li>\n\n\n\n<li><a href=\"https:\/\/amzn.to\/3L1Dd48\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Comal<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/amzn.to\/3PhgyU5\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Tortillero<\/a>&nbsp;o&nbsp;<a href=\"https:\/\/amzn.to\/47S5QdQ\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">servilleta de tela de cocina<\/a><\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Procedimiento<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">Prepara el Tocino<\/h4>\n\n\n\n<p class=\"has-base-background-color has-background\">* Si no tienes grasa de tocino acumulada, necesitar\u00e1s freir tocino antes de empezar. Dependiendo de la grasa que tenga el paquete que compraste, necesitar\u00e1s aproximadamente 9-10 rebanadas.&nbsp;<\/p>\n\n\n\n<p>Usar\u00e1s 3-4 rebanadas para esta receta y con las que te sobran puedes preparar esta receta deliciosa:&nbsp;<a href=\"https:\/\/www.mamalatinatips.com\/es\/2021\/03\/ensalada-pollo-tocino-datiles-macadamias.html\">ensalada de pollo con tocino y macadamias<\/a>.<\/p>\n\n\n\n<p>Pica las rebanadas de tocino lo m\u00e1s finamente que puedas, esto ayuda a que el sabor se esparza por toda la masa, pero tambi\u00e9n te ayudar\u00e1 en el momento de extender la tortilla.&nbsp;<\/p>\n\n\n\n<p>Cuando las piezas de tocino son muy grandes podr\u00edan afectar el grosor de la tortilla y podr\u00eda romperla tambi\u00e9n. Deja aparte.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Prepara la masa<\/h4>\n\n\n\n<p>En un taz\u00f3n mediano combina harina, grasa del tocino (ya sea firme si la has estado acumulando, o l\u00edquida si acabas de fre\u00edr el tocino), sal y agua hirviendo.&nbsp;<\/p>\n\n\n\n<p>Revuelve con una cuchara de madera primero, recuerda que el agua est\u00e1 muy caliente, hasta la grasa del tocino se haya o derretido o integrado.&nbsp;<\/p>\n\n\n\n<p>A\u00f1ade el tocino picado y con una mano sigue amasando hasta lograr una bolla ligeramente h\u00fameda y el\u00e1stica, que se despegue de tu mano f\u00e1cilmente. En d\u00edas lluviosos o h\u00famedos la masa podr\u00eda estar m\u00e1s h\u00fameda de lo normal, si despu\u00e9s de amasar unos 5 minutos notas que la masa sigue h\u00fameda y muy pegajosa, agrega una cucharadita de harina y sigue amasando.&nbsp;<\/p>\n\n\n\n<p class=\"has-base-background-color has-background\">Repite de ser necesario, pero ten cuidado de no agregar mucha harina porque eso podr\u00eda hacer que tus tortillas queden secas y duras al cocerse. La masa debe sentirse ligeramente h\u00fameda. Procura no agregar m\u00e1s de tres cucharadas.<\/p>\n\n\n\n<p class=\"has-base-background-color has-background\">Y al contrario, en d\u00edas muy calurosos o secos la masa podr\u00eda requerir de m\u00e1s agua. Agrega de cucharadita en cucharadita.&nbsp;<\/p>\n\n\n\n<p>Recuerda que la pr\u00e1ctica hace al maestro, conforme hagas m\u00e1s y m\u00e1s tortillas identificar\u00e1s cual es la textura ideal.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Divide y reposa la masa<\/h4>\n\n\n\n<p>Divide la masa en el n\u00famero de tortillas que desees, la informaci\u00f3n nutricional y las fotos en esta receta es para tortillas de tama\u00f1o regular, pero tu puedes hacerlas m\u00e1s peque\u00f1as o m\u00e1s grandes. Comales o sartenes de hierro forjado tienden a mantener el calor nivelado, otro tipo de sartenes o comales necesitar\u00e1n de ajuste en la temperatura conforme las tortillas se cuezan.&nbsp;<\/p>\n\n\n\n<p>Cuando observes que la superficie ha cambiado de un tono blanquecino a un tono amarillento se empiezan a formar burbujas, vol\u00e9a la tortilla. Esto llevar\u00e1, dependiendo de tu estufa y comal entre 45-55 segundos.&nbsp;<\/p>\n\n\n\n<p>Espera otros 40-45 segundos para cocinar el otro lado. Voltea nuevamente y cuece por 10-25 segundos. Esto tomar\u00e1 aproximadamente 8 minutos<\/div><\/li><li id=\"wprm-recipe-69223-step-1-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Nota importante: El clima afecta la textura de la masa. En d\u00edas lluviosos o h\u00famedos la masa podr\u00eda estar m\u00e1s h\u00fameda de lo normal, si despu\u00e9s de amasar unos 5 minutos notas que la masa sigue h\u00fameda y muy pegajosa, agrega una cucharadita de harina y sigue amasando.<\/div><\/li><li id=\"wprm-recipe-69223-step-1-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Repite de ser necesario, pero ten cuidado de no agregar mucha harina porque eso podr\u00eda hacer que tus tortillas queden secas y duras al cocerse. La masa debe sentirse ligeramente h\u00fameda.
