Mi abuelita acostumbraba cortar las tortillas en pedazos y ponerlas en una charola la cual dejaba sobre la mesa toda la noche. Esto secaba las tortillas a\u00fan m\u00e1s.&nbsp;<\/p>\n\n\n\n<p>Para esta receta usamos tortillas de ma\u00edz de tama\u00f1o regular, cortadas en tri\u00e1ngulos las cuales freimos justo antes de servir los chilaquiles.<\/p>\n\n\n\n<p>Sin embargo cuando no tenemos mucho tiempo abrimos una bolsa de totopos o \u201ctortilla chips\u201d que generalmente tenemos en casa. F\u00e1cil y r\u00e1pido.&nbsp;<\/p>\n\n\n\n<p>Con esta receta combinas los totopos con la salsa hasta que se suavicen un  poco. Sin embargo si deseas tus chilaquiles crujientes, no hagas esto, sino sirve una capa de totopos y luego una capa de salsa. Verduras<\/h4>\n\n\n\n<p>Calienta un comal o sart\u00e9n de hierro forjado y coloca los jitomates, la cebolla, los chiles serranos y los dientes de ajo sobre \u00e9l. Mant\u00e9n una temperatura media.<\/p>\n\n\n\n<p>Voltea las verduras conforme vas viendo que se van tatemando (asando) para que se asen por todos lados. Esto tomar\u00e1 de 20 a 25 minutos.&nbsp;<\/p>\n\n\n\n<p>Procura desbaratar las capas de la cebolla conforme la vas volteando. Y una nota importante, los ajos y las cebollas se asar\u00e1n primero que los jitomates y los serranos, cuando est\u00e9n listas retirarlos inmediatamente para que no se quemen.&nbsp;<\/p>\n\n\n\n<p class=\"has-base-background-color has-background\">Tip: Coloca los jitomates con el \u00e1rea del ped\u00fanculo hacia abajo. Procura no poner muchos de un jal\u00f3n. Al principio ver\u00e1s que las piezas se juntan unas con otras, despu\u00e9s de unos segundos toma una cuchara y cuidadosamente mu\u00e9velas para que se vayan despegando. Mira el video.&nbsp;<\/p>\n\n\n\n<p>Las tortillas se fr\u00eden con mucha rapidez no les quites la vista de encima y de vez en cuando mu\u00e9velas con la cuchara. Cuando notes que pedacitos de la tortillas se van asentando en la olla y el aceite se va terminando. Apaga el fuego, retira el aceite, limpia de la olla y continua hasta que termines con todos los totopos. Deja aparte.&nbsp;<\/p>\n\n\n\n<p>Si tienes una freidora de aire o freidora regular \u00fasala para ahorrar tiempo y esfuerzo.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Prepara la Salsa<\/h4>\n\n\n\n<p>Corta los tallos de los chiles asados.
