Cuando le pregunt\u00e9 como lo hac\u00eda y ella mi explic\u00f3 le dije, &#8220;Mam\u00e1 en base a esos ingredientes ese no es atole de cajeta, \u00a1es atole de caramelo!&#8221; ella sonri\u00f3 y creo que estuvo de acuerdo conmigo.<\/p>\n\n\n\n<p>Y as\u00ed es como consegu\u00ed la receta de este atole que te comparto hoy. Para esta receta us\u00e9 leche descremada, o 2% como se le conoce ac\u00e1 en los Estados Unidos. <\/p>\n\n\n\n<p>Para hacerlo vegano s\u00f3lo necesitas sustituir la leche de vaca por leche de almendras, o linaza.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Sobre la Canela<\/h3>\n\n\n\n<p>Aseg\u00farate de comprar canela en raja, grande y arom\u00e1tica. A veces los supermercados venden un tipo de canela que es m\u00e1s peque\u00f1a y compacta, sin olor.<\/p>\n\n\n\n<p>La que recomiendo es aquella en la que puedes ver las capas, que es arom\u00e1tica y que se puede desbaratar si la aprietas entre tus dedos. Ver\u00e1s que primero se forman grumos y una que otra &#8220;piedra de az\u00facar&#8221;. Con la cuchara velas disolviendo hasta que se forme un jarabe color \u00e1mbar muy claro.<\/p>\n\n\n\n<p>Tan pronto como se forme el jarabe el caramelo est\u00e1 listo, por favor no pierdas tiempo porque se podr\u00eda quemar, apaga el fuego (o remueve la sart\u00e9n de la estufa), toma una taza de la leche caliente y cuidadosamente, vac\u00eda la leche sobre el caramelo.<\/p>\n\n\n\n<p>Ver\u00e1s que el caramelo medio se solidifica al contacto con la leche, no te preocupes, sigue moviendo y se ir\u00e1 disolviendo. <\/p>\n\n\n\n<p>Cuando el caramelo est\u00e1 completamente disuelto, vac\u00eda al resto de la leche que se est\u00e1 calentando.<\/p>\n\n\n\n<p>Disuelve la f\u00e9cula de ma\u00edz en la otra taza de leche, esta tiene que estar fr\u00eda, esto es importante, si no lo est\u00e1 la f\u00e9cula no se disolver\u00e1 f\u00e1cilmente. <\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"683\" height=\"1024\" data-pin-description=\"Necesitas s\u00f3lo 4 ingredientes y menos de media hora para preparar este atole de caramelo. Es importante que no dejes de mover para evitar que la leche o el az\u00facar se pegue al fondo del pocillo.<\/p>\n\n\n\n<p>Conforme pasan los minutos notar\u00e1s que el atole tomar\u00e1 una consistencia con m\u00e1s cuerpo y tersa.
