En esa zona de M\u00e9xico las enchiladas son rojas porque est\u00e1n hechas con una base de chile guajillo.<\/p>\n\n\n\n<p>Tradicionalmente se sirven con papas, zanahorias y chiles en vinagre y van rellenas de carne, queso o verduras. Con la brocha de cocina engrasa la barra.<\/p>\n\n\n\n<p>Cubre con el pl\u00e1stico de cocina o servilleta de papel. Refrigera toda la noche.  <\/p>\n\n\n\n<p>Al d\u00eda siguiente: Saca el pan del refrigerador y prende el horno a la menor temperatura posible por un par de minutos. Ap\u00e1galo y checa la temperatura. <\/p>\n\n\n\n<p>Cuando la temperatura sea de 37 \u00b0C (100 \u00b0F) o menos, coloca el pan dentro (es muy importante que te asegures que el horno est\u00e1 completamente apagado). <\/p>\n\n\n\n<p>El leudado lo llevar\u00e1 a crecer el doble de su tama\u00f1o. Sigue las mismas instrucciones anteriores y ponlo en el horno APAGADO y calientito a una temperatura no mayor de 37 \u00b0C (100 \u00b0F). Se descongelar\u00e1 y empezar\u00e1 el laudado al mismo tiempo, esto tomar\u00e1 aproximadamente 3.5 &#8211; 4 horas. <\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Prepara el relleno<\/h4>\n\n\n\n<p>Pela y pica finamente la zanahoria y la papa. Vac\u00eda a una olla, cubre con agua y cuece hasta que las verduras est\u00e9n ligeramente firmes. Tomar\u00e1 aproximadamente unos 5 minutos una vez que el agua empiece a hervir. <\/p>\n\n\n\n<p>Desvena y despata los chiles guajillos y col\u00f3calos en el taz\u00f3n de vidrio. A\u00f1ade el ajo y cubre con agua hirviendo. Mezcla bien y cu\u00e9la la salsa.  <\/p>\n\n\n\n<p>Calienta una cucharada sopera de aceite en una sart\u00e9n grande, vac\u00eda la salsa y fr\u00ede por un minuto. A\u00f1ade el pollo y verduras. Con el rodillo extiende la masa hasta que tengas un rect\u00e1ngulo de 20&#215;28 cm (10&#215;14 pulgadas).&nbsp;<\/p>\n\n\n\n<p>Esparse la mezcla de pollo y chile guajillo sobre la masa, dejando un cent\u00edmetro libre enlas orillas.
