Uno de mis favoritos es el <a href=\"https:\/\/www.mamalatinatips.com\/es\/2014\/12\/atole-de-limon.html\">atole de lim\u00f3n<\/a>.<\/p>\n\n\n\n<p>Este atole de fue inspirado por los sabores del oto\u00f1o como la calabaza en tacha, un postre mexicano muy popular de estas fechas. Lo m\u00e1s f\u00e1cil, r\u00e1pido y barato es usar una lata de pur\u00e9. Son f\u00e1ciles de encontrar y ahorran mucho tiempo.<\/p>\n\n\n\n<p>Para espesar los atoles mexicanos generalmente se usa harina de ma\u00edz (para hacer tortillas) o mi preferida, la f\u00e9cula de ma\u00edz. Yo los compr\u00e9 en el supermercado de\u00a0<a href=\"https:\/\/www.ralphs.com\/\" target=\"_blank\" aria-label=\" (opens in a new tab)\" rel=\"noreferrer noopener sponsored\" class=\"ek-link\">Ralphs<\/a>, una de las\u00a0<a href=\"https:\/\/www.kroger.com\" target=\"_blank\" aria-label=\" (opens in a new tab)\" rel=\"noreferrer noopener sponsored\" class=\"ek-link\">tiendas de la familia Kroger<\/a>. Investiga, a lo mejor hay una cercana a ti. <\/p>\n\n\n\n<p>A mi especialmente me gusta la su l\u00ednea de\u00a0<strong>calabaza en lata,<\/strong>\u00a0no s\u00f3lo es muy rica sino que me ahorra mucho tiempo al preparar esta receta.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Atoles y Bicarbonato de Sodio<\/h2>\n\n\n\n<p>Un ingrediente important\u00edsimo cuando haces atoles que llevan alguna fruta o verdura \u00e1cida como fresas, naranja, guayaba o en este caso calabaza, es el bicarbonato de sodio.<\/p>\n\n\n\n<p>Cuando combinas una fruta o verdura \u00e1cida con la leche existe la posibilida de que &#8220;se corte&#8221; esto es, la leche se descompone y pasa de una textura tersa a una textura rota y l\u00edquida.<\/p>\n\n\n\n<p>El bicarbonato de sodio entonces juega un papel primordial para contrarrestar la acidez de la calabaza. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\u00bfQu\u00e9 Hacer Si el Atole &#8220;Se Corta&#8221;?<\/h2>\n\n\n\n<p>A veces, a\u00fan usando el bicarbonato de sodio el atole &#8220;se corta&#8221; si esto sucede hay una manera muy r\u00e1pida de arreglarlo.<\/p>\n\n\n\n<p>Primero que nada, no lo vayas a tirar, respira y apaga el fuego. D\u00e9jalo reposar por unos minutos para que le baje lo caliente. Retira la raja de canela y d\u00e9jala a un lado.<\/p>\n\n\n\n<p>Vac\u00eda el atole en un vaso de licuadora y lic\u00faa por medio minuto. Regresa a la olla, agrega la canela de nuevo y permite que rompa el hervor. A algunas personas les gusta el atole con una consistencia muy l\u00edquida, a otras m\u00e1s espeso.<\/p>\n\n\n\n<p>Es importante mencionar que el atole se espesar\u00e1 conforme se enfr\u00eda. Si te sobr\u00f3, ponlo en el refrigerador y s\u00edrvelo al d\u00eda siguiente. Mientras m\u00e1s hierve m\u00e1s se espesa.<\/p>\n\n\n\n<p>Cuela el atole para remover las piezas sueltas de la canela y d\u00e9jalo enfriar por unos 10 minutos.
