Agrega arroz y frijoles o una ensalada para un platillo completo.<\/p>\n<h2>A la Poblana<\/h2>\n<p><strong>A la poblana<\/strong> es un t\u00e9rmino culinario mexicano que se aplica a aquellos platillos que tienen chile poblano, cebolla y en muchas ocasiones granos de elote tambi\u00e9n. Te recomiendo que utilices una <a href=\"https:\/\/amzn.to\/2AQr8x5\" target=\"_blank\" rel=\"noopener nofollow\">sart\u00e9n de hierro forjado<\/a>, pero si no tienes, puedes usar cualquiera que tegas en casa.<\/p>\n<p>Necesitar\u00e1s aceite o mantequilla y hierbas frescas como tomillo, mejorana, salvia u or\u00e9gano.<\/p>\n<p>Escoge un corte de carne de buena calidad. D\u00e9jalos reposar sobre una tabla de madera por 25-30 minutos. Deben estar a temperatura ambiente antes de cocinarlos.<\/p>\n<p>En lo que la carne reposa. Coloca los chiles poblanos sobre una charola para hornear y ponlos bajo el fuego, volt\u00e9alos conforme se vayan asando. S\u00e1calos del horno y d\u00e9jalos enfriar por cinco minutos.<\/p>\n<p>Rebana las cebollas en ruedas de aprox. \u00bc pulgada de ancho. Pela y retira las semillas de los chiles poblanos. C\u00f3rtalos en tiras. Deja aparte.<\/p>\n<p>Calienta una sart\u00e9n antiadherente (o de hierro forjado) sobre fuego medio alto. Vac\u00eda una cucharada de aceite de oliva. Coloca cuidadosamente los filetes en la sart\u00e9n y cocina 1 minuto por lado para sellarlos.<\/p>\n<p>A\u00f1ade los ajos, ramas de or\u00e9gano y mantequilla a la sart\u00e9n. Fr\u00ede los filetes 3-4 minutos por lado (o al gusto dependiendo del nivel de cocimiento deseado). B\u00e1\u00f1alos de vez en cuando con los jugos y mantequilla derretida.<\/p>\n<p>Retira los filetes de la sart\u00e9n y reposa por 10-12 minutos. Este paso es importante para que la carne reacomode sus jugos.<\/p>\n<p>Mientras la carne reposa.\u00a0Calienta dos cucharadas de aceite en una sart\u00e9n sobre fuego medio-alto. Agrega la cebolla y sofr\u00ede hasta que se torne transparente. A\u00f1ade las tiras de chile poblano, granos de ma\u00edz, y 1\/2 cucharadita de sal. Revuelve y cocina por 4-5 minutos m\u00e1s.
