Si lo conoces, quiz\u00e1 te asombrar\u00e1 saber que de hecho empez\u00f3 siendo un desayuno llamado &#8220;almuerzo huasteco.&#8221;<\/p>\n<h2>El Origen de la Carne Asada a la Tampique\u00f1a<\/h2>\n<p>El origen de este platillo se le otorga a Don Jos\u00e9 In\u00e9s Loredo, un restaurantero quien vivi\u00f3 y se enamor\u00f3 de la ciudad de Tampico, Tamaulipas.\u00a0Aunque hay que darle su lugar tambi\u00e9n a Don Fidel Loredo, su hermano y a Antonio de Rocabruna, quienes estaban a cargo de la cocina de su restaurante \u201cClub Tampico\u201d en la Ciudad de M\u00e9xico. (1)<\/p>\n<p>El &#8220;Club Tampico&#8221; creado en el a\u00f1o de 1939, abr\u00eda 24 horas al d\u00eda, y uno de sus platillos era el &#8220;almuerzo huasteco&#8221; servido muy temprano en la ma\u00f1ana.<\/p>\n<p>Este almuerzo consist\u00eda en un trozo de cecina, enchiladas verdes, queso fresco asado a la plancha y frijoles de la olla con epazote. Se hizo tan popular que los comensales lo ped\u00edan a la hora de la comida, es cuando cambi\u00f3 su nombre cambia a <strong>carne asada a la tampique\u00f1a<\/strong>.<\/p>\n<p>Es en este momento que se a\u00f1aden las rajas poblanas para hacerlo m\u00e1s completo. Pica en rajas- tiras largas delgadas. Deja aparte.<\/p>\n<p>Pon un asador or grill (o sart\u00e9n) a calentar a fuego medio alto, engrasado con la otra cucharada de aceite. Asa los bisteces aproximadamente 2 minutos y medio por lado, dependiendo del grosor. La carne debe estar cocida pero tierna y jugosa.<\/p>\n<p>Calienta la salsa de enchiladas y las tortillas.
