No hay un men\u00fa en s\u00ed, cada familia prepara los platillos favoritos de sus seres queridos.&#8221;<\/p>\n<p>As\u00ed que en honor de mi abuelita hoy te comparto la receta de carne de puerco en chile negro. Hay muchos platillos que me hacen pensar en ella, y este es uno de ellos. Recuerdo verla con su mandil enfrente de una gran cazuela friendo la carne y preparando la salsa. Algunas familias preparan el chile negro con jitomate, a mi me gusta hacerlo con tomatillos y vinagre.<\/p>\n<p>Pero definitivamente lo que hace este platillo uno de nuestros favoritos es la carne de cerdo. Si no tienes olla de presi\u00f3n puedes usar una olla normal pero ajusta el tiempo de cocimiento ya que tomar\u00e1 un poco m\u00e1s.<\/p>\n<p>Fr\u00ede ligeramente la carne en el aceite, no tiene que est\u00e1r cocida, s\u00f3lo cambiar de su tono rosado a beige.<\/p>\n<p>Agrega el ajo, la cebolla, el agua y la sal. Tapa y cuece de acuerdo a las instrucciones de tu olla. Coce a fuego alto. Tapa y deja reposar por 15 minutos. Checa de vez en cuando para asegurarte que los chiles siguen sumergidos.<\/p>\n<p>Vacia los tomatillos, ajos, cebolla y chiles negros cocidos a la licuadora, remueve una media taza del l\u00edquido del cocimiento para que la salsa no quede muy aguada.<\/p>\n<p>Agrega,tomillo, sal y vinagre. Muele hasta incorporar completamente.<\/p>\n<p>En una sart\u00e9n grande calienta el aceite y vac\u00eda la salsa.
