Ol\u00eda tan rico que lo primero que yo hac\u00eda era tomarlo entre mis manos, clavar mi cabeza en su humo arom\u00e1tico y aspirar para llenar mis pulmones. Algunas familias usan una combinaci\u00f3n de maciza, pierna o costilla y hasta un pedazo de cabeza o patita. <\/p>\n\n\n\n<p>Lo importante es que tenga una buena cantidad de carne que se pueda deshebrar, unos huesos y un poco de grasa para darle sabor al caldo.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ma\u00edz Pozolero<\/h3>\n\n\n\n<p>En mi opini\u00f3n es el ma\u00edz pozolero el que le da esa textura y sabor tradicional al platillo. Y lo puedes encontrar en varias presentaci\u00f3nes.<\/p>\n\n\n\n<p>Si vives en M\u00e9xico seguro lo encuentras en bolsas en cualquier supermercado. Si vives en Estados Unidos o alguna otra parte del mundo lo encuentras en lata. Yo prefiero el <a href=\"https:\/\/amzn.to\/3ZFlB2I\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">ma\u00edz de lata<\/a> porque est\u00e1 limpio, descabezado y precocido. A diferencia del de bolsa el cual encuentro un poco m\u00e1s seco.<\/p>\n\n\n\n<p>Sea cual fuere, compra el m\u00e1s natural, sin preservativos, que encuentres.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Chiles Secos<\/h3>\n\n\n\n<p>El chile guajillo es el que le da ese sabor ahumado y delicioso sin ser super picante. Pero si a tu familia le gusta mucho el chile puedes a\u00f1adir un pu\u00f1ado de chiles de \u00e1rbol. <\/p>\n\n\n\n<p>Si quieres a\u00f1adir un poco de dulzura, agrega 1 o 2 chiles anchos.<\/p>\n\n\n\n<p>Encuentra los chiles en cualquier mercado mexicano o en el \u00e1rea de alimentos hispanos en los supermercados, si vives en Estados Unidos. A veces los encuentras en bolsas a veces a granel. No lo omitas por favor. <\/p>\n\n\n\n<p>Esta receta lo usa tanto en el caldillo como al servirlo.Cuando era ni\u00f1a mi mam\u00e1 me dec\u00eda &#8220;ponle or\u00e9gano para que te ayude en la digesti\u00f3n&#8221; y aunque esto<a href=\"https:\/\/medlineplus.gov\/spanish\/druginfo\/natural\/644.html\" target=\"_blank\" rel=\"noreferrer noopener\"> posiblemente es cierto<\/a>, esta hierba arom\u00e1tica le da un sabor muy especial dificil de decribir, te doy mi palabra.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">C\u00f3mo se Sirve el Pozole<\/h2>\n\n\n\n<p>Servir el pozole es divertido porque cada persona puede agregarle lo que desee. Estos son algunas de las guarniciones populares:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Lechuga picada. Pero no cualquier lechuga, &#8220;iceberg&#8221; o lechuga de bola es mi favorita. Es cruijiente y no se marchita tan r\u00e1pidamente como otras variedades. Algunas familias prefieren la col. Puedes sustituir con lechuga romana.<\/li>\n\n\n\n<li>Cebolla blanca picada. Esta variedad le da un poco de dulzura al platillo. Puedes sustituir con cebolla amarilla o dulce.<\/li>\n\n\n\n<li>R\u00e1banos. Para a\u00f1adir textura, generalmente se sirve con r\u00e1banos rojos pero puedes usar cualquier otra variedad.<\/li>\n\n\n\n<li>Jugo de lim\u00f3n, reci\u00e9n exprimido por favor.<\/li>\n\n\n\n<li>Or\u00e9gano.<\/li>\n\n\n\n<li>Salsa. Si lo quieres m\u00e1s picoso<\/li>\n\n\n\n<li>Tostadas caseras.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">C\u00f3mo Recalentar y Guardar Pozole<\/h2>\n\n\n\n<p>Primero necesito decirte algo importante. Preparar este delicioso platillo con antelaci\u00f3n ayuda a que todos los sabores se mezclen perfectamente. Por supuesto es delicioso el d\u00eda que lo preparas pero si puedes hacerlo un d\u00eda antes \u00a1mucho mejor! Les dar\u00e1s una experiencia culinaria a tus invitados.&nbsp;<\/p>\n\n\n\n<p>D\u00e9jalo enfriar completamente, vac\u00edalo a un contenedor con tapadera y guarda en el refrigerador por un m\u00e1ximo de 4 d\u00edas o cong\u00e9lalo hasta por 6 meses.<\/p>\n\n\n\n<p>A mi me gusta recalentarlo en una olla peque\u00f1a sobre la estufa pero tambi\u00e9n puedes usar el microondas. Puedes de hecho dejarlos ah\u00ed hasta el momento de preparar la salsa.<\/p>\n\n\n\n<p>Transfiere los chiles, ajos, cebolla y agua a una licuadora o procesador de alimentos. A\u00f1ade el or\u00e9gano y la sal y muele hasta lograr una salsa tersa. Lava los limones pero no los cortes hasta el momento de servir.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Termina de Preparar el Caldo<\/h4>\n\n\n\n<p>Cuando la carne est\u00e9 cocida s\u00e1cala del caldo, a excepci\u00f3n de los huesos. Tambi\u00e9n retira las hojas de laurel y piezas de ajo y cebolla que encuentres, pero no te estreses mucho si no puedes sacarlo todo.
