El verde es el chile poblano, el blanco es la salsa cremosa de nuez de Castilla y el rojo de los granos de granada que los adornan.  <\/p>\n\n\n\n<p>Los chiles poblanos se asan, pelan y rellenan con un picadillo muy especial hecho de una mezcla de carnes, frutas, nueces y especias. Finalmente se ba\u00f1an con la nogada. <\/p>\n\n\n\n<p>De acuerdo a la leyenda, estos chiles fueron creados por un grupo de monjas Agustinas del convento de Santa M\u00f3nica de la ciudad de Puebla, quienes aprovecharon algunos de los productos de temporada para crear un platillo festivo en honor de Agust\u00edn de Iturbide, uno de los l\u00edderes de la guerra de la independencia. <\/p>\n\n\n\n<p>Desde entonces es considerado uno de los platillos m\u00e1s patri\u00f3ticos de M\u00e9xico. <\/p>\n\n\n\n<p>Tradicionalmente, los chiles en nogada se sirven durante las fiestas del mes patrio, pero sobre todo el 16 de septiembre, D\u00eda de la Independencia de M\u00e9xico. Son de un verde oscuro intenso cuando est\u00e1n frescos. Tienen un gran sabor y son moderadamente picosos.<\/p>\n\n\n\n<p><span style=\"text-decoration: underline;\">Carnes<\/span>\u00a0\u2013 Mi receta incluye carne molida de res, tocino y jam\u00f3n. Sin embargo algunas familias le ponen carne molida de puerco tambi\u00e9n. <\/p>\n\n\n\n<p><span style=\"text-decoration: underline;\">Fruta<\/span>\u00a0\u2013 Frutas frescas como manzanas y duraznos son mis favoritos. Otras recetas incluyen peras y pl\u00e1tano macho. Mi receta tambi\u00e9n incluye pasas. <\/p>\n\n\n\n<p><span style=\"text-decoration: underline;\">Nueces<\/span>\u00a0\u2013 Almendras, nueces (pecanas) y nuez de la India. Algunas recetas pueden incluir pi\u00f1ones. <\/p>\n\n\n\n<p><span style=\"text-decoration: underline;\">Crema<\/span>\u00a0\u2013 Usa una crema que no sea muy agria. Cuidadosamente remueve las semillas. Repite con los otros 11 chiles<\/p>\n\n\n\n<p>Hierve el agua y la sal en una olla. <\/p>\n\n\n\n<p>Coloca los chiles poblanos pelados y desvenados en un recipiente de vidrio y vac\u00eda el agua caliente y el vinagre sobre ellos. <\/p>\n\n\n\n<p>D\u00e9jalos reposar por 2-3 minutos. Esc\u00farrelos inmediatamente y d\u00e9jalos reposar hasta el momento de servir. Cuando est\u00e9 crujiente agrega la cebolla y el ajo picados. Baja el fuego y cocina hasta que la cebolla y el ajo est\u00e9n suaves, aproximadamente 2 minutos.<\/p>\n\n\n\n<p>Agrega la carne molida y cuece por 5 minutos. La salsa deber\u00e1 ser lo suficientemente l\u00edquida para ba\u00f1ar el chile, pero lo suficientemente espesa para cubrirlo sin que se vea la piel abajo.<\/p>\n\n\n\n<p>Seca bien los chiles con una toalla de papel y rell\u00e9nalos con cuatro cucharadas soperas cada uno.<\/p>\n\n\n\n<p>B\u00e1\u00f1alos con la nogada.
