This refreshing combination of naturally sweet strawberries and pungent ginger will make your family and friends sit up and take notice in the most delightful way. And the amazing thing is, this Strawberry-Ginger Sorbet needs just 3 ingredients to make. Try it out!

I have loved strawberries all my life. In fact, I would blend up a strawberry licuado for myself most every day before school when I was growing up. My mom would buy large baskets of strawberries in the mercado, then wash them and keep them in the fridge just for me. Thanks, mom!

Strawberries, available all year round in California, contain so many good things for you. A good source of fiber, folate, antioxidants and other nutrients, I love using them in many different types of dishes so I can be sure to get at least my portion of 8 strawberries each day! Here is one of those favorites dishes, Strawberry-Ginger Sorbet. Fresh, light and nutritious, I've added no sugar thanks to the natural sweetness of the strawberries and the apple juice, just make sure to buy 100% pure apple juice.

The only other ingredient is ginger. We like ginger so much for its refreshing spiciness, it complements the strawberry's fragrant fruitiness. If you are not familiar with fresh ginger root, this is how it looks. You can remove the skin with a potato peeler.

Here's the recipe:

Strawberry-Ginger Sorbet

Makes 4 cups

Ingredients

  • 1 lb fresh strawberries
  • 1 3/4 cup 100% pure apple juice
  • 3/4 of an inch of fresh ginger root, peeled
  • Fresh mint to garnish

Utensils

Purchase what you need with the help of these affiliate links

Wash, hull and chop strawberries into quarters. Place them in a metal loaf pan.

Pour in the apple juice.

Grate the ginger root into the strawberries and apple juice mixture. Mix well.

Cover the pan with plastic and freeze until solid or freeze overnight. Take the pan out of the freezer 30-40 minutes before serving. Break the strawberries block into pieces.

Place the pieces into a food processor and mix to desired consistency.

Serve immediately with mint if you like. Or, return to metal pan, cover with plastic and place in the freezer. Remove from freezer 10 minutes before serving.
