Pollo Mirabella / Chicken Mirabella

Hace mucho tiempo que no comparto una receta, ¿verdad?  Hoy es el turno de uno de nuestros platillos favoritos, no es un platillo mexicano, pero es riquísimo.  Yo  normalmente hago doble ración, y congelo la mitad para uso posterior*.

Pollo Mirabella

  • 3 dientes de ajo, picaditos
  • 8-10 ciruelas pasas, sin hueso
  • 8-10 aceitunas verdes, sin hueso
  • 2 cucharadas soperas de alcaparras
  • 3 cucharadas soperas de azúcar morena
  • 1 cucharada sopera de aceite de oliva
  • 1 cucharada sopera de vinagre de vino rojo
  • 1/8 taza de vino blanco seco
  • 1-2 hojas de laurel
  • 2 cucharaditas de orégano seco
  • sal y pimienta al gusto
  • 3 pechugas de pollo sin hueso y sin piel, o 12 fajitas (tenderloins) de pollo, yo prefiero estas últimas.

En un contenedor mediano o en una bolsa de plástico con cierre, combina muy bien, ajo, ciruelas pasas, aceitunas, alcaparras, azúcar morena, vinagre, vino blanco, hojas de laurel, orégano, sal y pimienta. Agrega el pollo y ponlo en tu refrigerador toda la noche.

Pre-calienta tu horno a 350 grados Farenheit (180 grados celsius aprox.)  Vacía el pollo y los condimentos en un molde para hornear, ponlo en el horno y hornea por 30 minutos o hasta que el pollo este cocido completamente,  durante el cocimiento toma un poco del jugo que va soltando y baña el pollo con él varias veces.

Yo generalmente lo sirvo con arroz y verduras a un lado, y pan calientito.  Un buen acompañamiento es el vino blanco que te sobró de la receta.

* Si congelas este platillo, te recomiento que lo hagas antes de cocerlo (sólo el pollo y condimentos), usa una bolsa de plástico con cierre.  Cuando estés lista para usarlo, descongélalo 24-48 hours (dependiendo de tu refrigerador) y sigue las instrucciones de cocimiento.  Por favor checa las recomendaciones de tiempo para congelar pollo.

I haven't posted a recipe in a long time, have I?  Today I would like to share with you one of our favorites, this is not a mexican dish, but it is very yummy.  I usually double it and freeze half for a quick dinner later*.

Chicken Mirabella

  • 3 garlic cloves, minced
  • 8-10 prunes, pitted
  • 8-10 green olives, pitted
  • 2 T capers, with liquid
  • 3 T brown sugar
  • 1 T olive oil
  • 1 T red wine vinegar
  • 1/8 cup dry white wine
  • 1-2 bay leaves
  • 2 teaspoon dried oregano
  • salt and pepper to taste
  • 3 boneless, skinless chicken breast halves or 8 chicken tenderloins (I prefer tenderloins)

In a medium container or in a resealable bag combine, garlic, prunes, olives, capers, brown sugar, olive oil, vinegar, wine, bay leaves, oregano, salt and pepper, mix well.  Add chicken, and refrigerate overnight.

Preheat oven to 350 degrees.  Pour chicken and condiments into baking dish and bake for 30 minutes, or until chicken is cooked through.  Spoon the broth over the chicken several times during baking.

I usually serve it with rice and vegetables at the side, plus warm bread.  You can always drink the rest of the wine with it.

* You can freeze this recipe just make sure to do it before cooking it (just chicken and condiments), if you do, it's easier if you use the resealable bag, give 24 to 48 hours to defrost in your refrigerator (depending or your fridge)  and follow the baking instructions. Please check safe recommended times to freeze chicken.
