Soy is a great meat substitute, it has a similar consistency and it will take the flavor of anything you pour over it. A few months back I tried these tostadas at my aunt’s house and I couldn’t stop eating them! They are easy to make and very refreshing. Last time we made them, I had them for three days in a row and the flavor just kept getting better.
Depending on the size of your tostadas and how much you put on top, it will make about 16-20 tostadas
- 1/2 pound dry soy
- 3 bay leaves
- 9 limes, juiced
- 7 tomatoes, finely chopped
- 1 medium white onion, finely chopped
- 2-3 serrano chiles, finely chopped
- Cilantro, finely chopped
- 3 tablespoons of Worcestershire sauce
- 2 chipotle chiles in adobo, chopped
- Salt to taste
- Pepper with lemon, to taste
Pour 3 -4 cups of water in a medium pot, add the bay leaves and salt, and warm it up. When the water starts boiling, add the dry soy, let it cook for about five minutes. Drain the soy, rinse with cold water, and with the help of a spoon or with your hands squeeze it to remove all excess water, let it cool down. You should do this early in the morning of the day you will serve it or one day before.
Add the cooked, drained and expressed soy to a medium container. Add the lime juice and the chopped onion, tomatoes, cilantro and chiles. Mix well until all the ingredients are well combined. Add the Worcestershire sauce, salt, pepper with lemon, and chipotle chiles.
Serve on tostadas and top with slices of avocado.
