Right at the end of my son's baseball season, we had some fun with our family and friends by having a Disney Junior inspired ice cream social.

We had so much fun at the party that I was inspired to create a new type of brownie to eat with ice cream. One of the flavors we had at the party was mint with chocolate chips and, of course, it was a big hit. So I thought, “what if you add a little “mintiness” into the mix.”

Now this is more of a serving suggestion than a recipe, but whatever you call it, it's a yummy way to celebrate one of our favorite Disney Junior characters! And it's simple.

Mickey Chocolate Mint Brownies

12 brownies

  • 6 chocolate mint chip cookies (look for them in the grocery store, you'll find them in the cookie section)
  • 1 package of brownie mix (depending on your favorite brownie mix, you may need eggs and oil)
  • 1/2 teaspoon mint extract

You will also need

  • 2 9×9 baking pans
  • Butter to grease baking pans
  • Mickey shaped cookie cutter

Pre-heat oven at 350 F

Grease the baking pans. With your hands break the chocolate mint cookies in small pieces. Following the instructions on the brownie package, prepare the brownie batter. Add the crushed cookies and mint extract. Separate the batter into the two pans.

Bake 25-30 or until a toothpick inserted in the middle comes out clean.

Remove from oven and let cool for at least 10 minutes. Cut the brownies with the Mickey Mouse cookie cutter.
