Shrimp Cocktail is one of those refreshing, yummy Mexican dishes perfect for Lent or anytime. I have never made it at home, but one of my cousins makes it often, so I took my computer and went to his house and learned how to make it. It turned out delicious and I was very surprised at how easy it is to make.
Makes 8 Small Cocktails
- 750 gm (about 1 1/2 pounds) shrimp for cocktail
- 1 cup of Ketchup
- 6 limes, juiced
- 5 roma tomatoes, finely chopped
- 1 small white onion, finely chopped
- 1 Avocado
- Cilantro, a large handful, chopped
- 1 serrano chile finely chopped
- Salt to taste
Pour water and salt in a medium pot and bring to the boil, add the shrimp and cook them for barely a minute. Drain them and rinse them with cold water immediately.
In a medium bowl mix ketchup, lime juice, tomatoes, onion, cilantro and the cooked shrimp. Salt to taste, serve with saltine crackers and sliced avocado on top. Enjoy!
