Lime Popsicles Recipe

Nothing is better than a cool, refreshing, sweet popsicle when the sun is out. I grew up eating them and one of my favorites is “Paletas de Hielo de Limón” (Lime popsicles). Mexicans are known for adding lime to almost everything, but we're also known for adding a bit of spiciness to our food, too. These have both.

The original, easy to make recipe, doesn't call for chile, but I like to give them a little twist by adding a bit of chile pepper at least to some of them. So here we go.

Lime and Chile Popsicle Recipe

Makes 10 small popsicles

  • 2 cups of water
  • 5 medium mexican limes or 7 key limes, juiced
  • 1/2 cup of sugar
  • ground chile pepper (with lime)

You will also need small plastic cups, mine are 3 inches tall, and popsicle sticks.

You can find the chile pepper (with lime) in the hispanic foods section of your supermarket. In Mexican supermarkets you will find tons choice in bottles next to the produce (fruit) section. One very famous brand is called Tajin.

Mix sugar, lime juice and water until well blended. If you don't want all your popsicles to have chile, divide the liquid in half. Add the chile pepper to the one half, I use 2 tablespoons for one cup of the lime/water/sugar mix. Pour into plastic cups and put them in the freezer.  Depending on your freezer temperature, check them out after one hour, if they are a little firm, try to add the popsicle sticks. If they stane straight up, you are in luck, leave them there, if not, wait another 40 minutes and try again.
