Avocado Christmas Wreath Salad Recipe

Avocado Salad

The holidays are here, yeah! We are celebrating the traditional Posadas this year (9 consecutive days before Christmas Day), we pray, we sing, we break a piñata each day, and we eat!

The Christmas season is my favorite time of year and some of my favorite moments are when the family get together to cook. On Christmas we have “Dinner” at 12:30 a.m., yes, you read that right, and it usually consists of a delicious chipotle spiced chicken broth; a special spaghetti my mom makes with butter, ham, parsley, cream and tons of Oaxaca cheese (doesn't it sound delicious); amazing chiles rellenos; a yummy dish that doesn't have a consistent name made either from pork loin or chicken, sometimes both; Nochebuena salad (a fruit salad made with jamaica and beets); apple-cream salad; carrot-pineapple salad; and desserts…  doesn't it sound delicious? I can't wait.

While we have all these beautiful and delicious dishes, I think our dinner needs a green salad, and this year I want to make avocado the main ingredient. I want it to be festive as well, so I made an Avocado Christmas Wreath Holiday Salad, let me know what you think. I'm planning on making it for Christmas Day.

Avocado Christmas Wreath Salad Recipe

Serves 8

  • 1 Iceberg lettuce
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 2 medium broccoli florets
  • 1 large roma tomato
  • Cilantro
  • 2 large ripe avocados from Mexico
  • Dried cranberries
  • Ranch Dressing (or your favorite one)

Wash and cut the lettuce in small pieces (using your hands is the best way).  Thinly slice into circles the red and yellow bell peppers (see pic).

Bell Peppers

Steam the broccoli florets until they are bright green, then cut them into small “trees.”  Chop tomato and cilantro into small pieces.

Wash the avocados, cut each of them carefully into four wreaths, peel them.

Now you are ready to assemble.

Place your 8 plates on a flat surface: first add a few pieces of lettuce on the plate.  Add one yellow pepper or red pepper “circle” on top, add the avocado wreath.

Take pieces of broccoli and put on top forming the wreath.

Spread pieces of tomato around the plate and add dry cranberries to the wreath.

Sprinkle chopped cilantro on the plate and wreath

With very thin pieces of red pepper, form a small bow and place it in the center of your wreath.

Top with your favorite dressing. I chose ranch because the white gives a nice contrast to the other colors, but you can use your favorite dressing.

That's it! A festive, colorful, yummy salad.
